So this is Christmas... Part 10: Christmas Baking



With only a few days left until Christmas, this is the perfect time to enjoy some time in the kitchen baking! I love Christmas baking, especially all the traditional favourites. This year I made: (Click on each heading for the link - most photos are from the same link as well)

Thermomix Fudge

A couple of friends and I spent an afternoon making fudgem including choc mint, choc orange and choc raspberry (using Your Inspiration At Home chocolate powders).

Truffles

The recipe I use is simply 1 packet of Malt biscuits crushed, 3 tablespoons of coconut, 1 tablespoon of cocoa and 1 can of condensed milk. Mix together and roll in extra coconut. Refrigerate until set! Yum.

Gingerbread Men (with 'Ninjabread' Men cutters!)
I used a packet mix because I wanted to buy the Ninjabread Men cutters. Here is a thermomix gingerbread recipe though - click here.

Christmas Cookies

The recipe I used is similiar to shortbread - melt 125g butter, and mix with 3/4 cup castor sugar, 2 tsp vanilla, 1 egg and 2 and a half cups of plain flour. Roll out and cut using cookie cutters. Bake on a greased tray for 10-12 mins in a 180 degree oven. Ice once cool.

White Chocolate Rocky Road

I actually just made this one up! I used a bag of Nestle white chocolate drops and melted these slowly in the microwave. Then I added cut up marshmallows, some mini m&m's and a few crushed up tim tams. Mix it all together and place in a tray lined with baking paper. Refrigerate for a few hours until set. SO yummy! You could also add pistachios, cranberries, cherries or gummy lollies. Anything really!

Shortbread

My Mum has this amazing shortbread recipe, titled 'Sheila's Shortbread' - no idea who Sheila is! One year, my aunty had made a batch, and Mum was telling her how nice they were and asked for the recipe. My aunty replied, "it's your recipe!" They really are that good! 

200g butter 
2/3 cup icing sugar
2 cups plain flour

1. Cream butter and sugar
2. Add flour and knead for 10 mins. 
3. Roll into loaf and chill for 60 mins. 
4. Cut the roll with the wrong side of the knife to make circle/oval shapes. 
5. Place on a greased tray and bake at 140 degrees for 20-25 mins.
